Oh! Calcutta’s most distinctive stories begin with the ingredients at its heart. From the sharpness of Gondhoraj lime and the pungency of Kashundi to the warmth of Panchphoron, the gentle richness of coconut and the depth of Bengal’s seafood traditions, these ingredients have shaped the flavours of its kitchens for generations.

Speaking on the legacy of Oh! Calcutta, Anjan Chatterjee, Founder, Chairman and MD of Speciality Restaurants Limited, shares, “Calcutta’s cuisine is an extraordinary marriage of Chinese, traditional Bengali, Colonial club culture, and royal Mughlai influences. With the refreshed look at Tardeo and our new inspired dishes, we wanted to take that culinary heritage further by spotlighting the unexplored flavours of Calcutta. Where else would you find all of this in one place? In a word, the answer is Calcutta. Or in two words, Oh! Calcutta.”

THE NEW MENU at Oh! Calcutta :

Kashundi Paneer Skewers

The new menu at Oh! Calcutta brings 16 new dishes, all built around the ingredients Bengal cooks with every day yet remain widely unexplored for the world: Gondhoraj, Kashundi, Panchphoron and Narkol. The Kashundi Paneer Skewers bring the sharp tang of Bengal’s fermented mustard sauce to grilled paneer, and the Gondhoraj Chicken Fingers use the fragrant Bengali lime, known as the ‘king of limes’, to give crisp chicken a fresh citrus finish. The Grilled Panchphoron Chicken is made with the five-spice blend of fenugreek, nigella, cumin, black mustard and fennel, taken from the Bengali home kitchen to the grill. The Narkol Jhal Shrimps pair the heat of a Bengali Jhal with the richness of coconut, and the Imperial Baked Crab, baked with ginger, chilli and parmesan, recalls Calcutta’s club dining days. The Chingri Pulao, chingri being the Bengali word for prawn, is inspired by the festive seafood tables of Bengal, and the Gondhoraj Cheese Cake gives the meal a tangy touch.

Alongside them, the menu brings back some street and home favourites in new forms. The Sweet Potato Ghugni Chaat pairs roasted sweet potato with the classic white pea stew, yoghurt and tangy chutney. Posto on Toast spreads poppy seed with mustard, chilli and kalonji on toast, and the Mochar Cheese Croquette crumb-fries banana blossom with coconut, ghee and garam masala. The Chicken Luchi Tacos fill Bengal’s puffed luchi with slow-cooked chicken, and the Crispy Fried Soft Shell Crab is seasoned with carom seeds, fried onion and garlic. The Yellow Taxi Dhaba Tadka is a dhaba-style dal inspired by Calcutta’s roadside eateries; the Mangsher Ghee Pulao is a mutton pulao cooked in ghee, Enoki Mushroom Bhaja and the Bhapa Sondesh is a steamed take on the beloved Bengali sweet.

CLASSICS :

While the new menu plays with bold flavours, the Classics at Oh! Calcutta is where Bengal’s old favourites are cooked the way they have always been, slowly and with plenty of heart. The starters cover the many kitchens of Calcutta. Hilsa Fish Fingers and Bengal Club Smoked Hilsa feature the fish Bengal loves most, and the Calcutta Fish Fry is the city’s classic bhetki fry, served with a mustard dip. The Prawn Cutlet, Anglo Indian Chicken Cutlet and Murshidabadi Murgi come from the club, Anglo-Indian and Mughlai traditions, and Tangra Chilli Chicken brings in the Chinese flavours of the city.

Bhetki Machher Paturi and Ilish Paturi are fish marinated in ground mustard and steamed in banana leaf, while the Ilisher Jhol and Katla Maacher Dom Jhol are light, everyday fish curries. Daab Chingri and Prawn Malai Curry cook prawns in coconut cream. Kosha Mangsho is mutton cooked slowly on a low flame, and the Railway Mutton Curry is a recipe from the railway canteens of the British Raj. The Chicken Chaap and Grand Trunk Chicken complete the meat dishes. For the vegetarian table, there are Mochar Ghonto made with banana blossom, Koraishutir Dhokar Dalna with green pea cakes in a tomato gravy, Chhana Koraishutir Chop, a paneer and green pea patty, Rajbarir Channar Kofta and Aloo Phoolkopir Dalna. They go best with Luchi, Petai Paratha, Gobindobhoger Bhaat, the Calcutta Biryani or the Kaju Kismis Pulao.

To satisfy your sweet cravings, pick from Bengal’s sweet traditions: Nolen Gur Rasgulla, Mishti Doi and Nolen Gur Payesh.

COCKTAILS ROOTED IN BENGALI FLAVOURS :
The bar draws on the same pantry as the kitchen, with gondhoraj, the fragrant “king of limes”, and raw mango at its heart. The East India Highball pairs gin with elderflower, gondhoraj and cucumber. Kal Boishakhi marries vodka with Aam Porar Shorbot, and the Gondhoraj Johnnie brings whisky, gondhoraj lime and ginger ale together in a long, aromatic serve. Picante adds a spicy edge with tequila, jalapeño and blue agave; the Mango Jalapeno Martini adds gondhoraj lime to the mix, while the Oh! Calcutta Mojito mixes rum with gondhoraj lime and mint. The Classic Cocktails list stays familiar, with the Negroni, Margarita and Caipiroska.

The zero-proof selection includes Aam Porar Shorbot, Gondhoraj Shorbot, a Cucumber and Cumin Cooler, a Lychee and Gondhoraj Mojito and a Watermelon and Basil Crush.

Complementing the new menu is a refreshed setting adorned with Alpona, Bengal’s traditional folk artwork, which carries the spirit and heritage of Calcutta into the dining experience.

Oh! Calcutta looks forward to welcoming you for an experience of Bengali food at its Boldest!
